Leveraging White Supremacy

There is this great scene in the Autobiography of Malcolm X that illustrates gastro-politics which requires you to discuss both sides expectations and leveraging white supremacy. As clients, how did sandwich men like Malcolm on sleeper car trains in 1940s view the white customers they wanted to sell to hungry patrons? Malcolm and others in the food industry then and now leveraged the psychology of white supremacy that viewed black folks as too dump to trick them into paying more and tipping more for the food they sold resulting in higher wages.
