Nation of Islam (NOI) leader and food rebel Elijah Muhammad pressed NOI members to grow and prepare their own food, precisely because those who controlled the existing food system relied on ingredients and processes that harmed the people who ate them. Like me, Muhammad paid close attention to food’s effect on the colon; he favored honey over refined sugar and flours other than white flour, and he held a vegetarian or vegan diet to be superior to one built on meat. When members did buy lamb, chicken, or beef, he advised purchasing it from Orthodox kosher markets, which he considered more careful about cleanliness and health.
