People who know how to season food well makes use of several fresh vegetables, including scallions, onions, and garlic. Vinegar, soy sauce, fish sauce, and hot sauce are liquids that are also staples in seasoning. African and African American food puts the accent on meat flavoring in dishes like collards, kale, and turnip greens and the use of palm and peanut oil when frying.
