When customers walked into Fultonia for the first time, “Doc”—as patrons lovingly called Dr. Alvenia Moody Fulton—would slide a green drink into their hands as she welcomed them. Lining the shelves were a rainbow of colorful bottles containing herbal remedies, supplements, and freshly pressed juices. Vegetarian foods and baked goods covered the counters, and meat substitutes filled the fridge. Crisp salads, steaming soups, vegetarian chili, and other plant-based meals would float from the kitchen to the dining room at the back of her store, where health-conscious Chicagoans could sit down to two meals a day. Proudly displayed in the front of the shop were copies of Fulton’s self-published books, which shared her philosophies and methods behind eating to achieve health, strength, and longevity.
