Traditional Baked Mac’ & Cheese

Research on the culinary traditions have resulted in a good number of sources from the late nineteenth century to the 1940s. Most come from historic newspapers and images. They serve as the basis for a number of our series on this blog. We share our findings and recipes in a paraphrased format when necessary to make them legible and we share illustrative direct quotes as often as possible.

Savory Mac and Cheese Recipe

Ingredients

1 fourth package of macaroni

three quarts’ water

1 teaspoon salt

¼ pound cheese

1 cup chopped Brazil nuts

2 cups canned tomatoes

Salt-and-pepper

Instructions

Cook macaroni and boiling salted water until tender. Drain and blanched in cold water and arrange in greased baking dish and alternate layers with cheese in Brazil nuts. Season tomatoes to taste with salt and pepper and pour over macaroni. Bake about 300° for 15 minutes or until cheese is melted.
