In the nineteenth century Caribbean enslaved Africans made culinary inventions from the extra “measure of rum,” their master’s doled out during the Christmas holidays” observed one traveler. This description reminded me of my mother in law’s rum cake which she make during the Christmas holidays—it’s out of site! Rum cake is very labor intensive and expensive which is probably the reason why people don’t make it year round. Here’s a vegan interpretation of a Cuban rum cake recipe that I always wanted to try; I hear it’s really good. You can always use regular ingredients where the recipe calls for non-dairy substitutes.
