This article is a continuation of the Eating While Poor series that combined with Dr. Alvenia Fulton’s research. We hope to provide valuable information on healthy eating in difficult times, particularly in the midst of the Covid-19 pandemic.

Dr. Fulton says soybeans are a great source of protein, essential amino acids, calcium and B vitamins. One can purchase meat substitute dishes made out of soybeans such as burgers, chicken, sausage, turkey, and more and more grocery stores are carrying them. You can use them in traditional recipes for all kinds of meals and in the process save lots of money on your food budget.
